Bread proofing basket – bake fresh bread yourself

If you want to bake bread, it is best to use a bread proofing basket.
The bread proofing basket gives the loaf of bread the typical groove-like shape during the fermentation process, as you know it from the baker on his own bread.
The fermentation process makes the dough softer and also looser.
In summary, you get a super fluffy and even bread.
Most of the breads from the area have nothing to do with real bread – as you know it from the past.
Among other things, flavor enhancers, stabilizers and other ingredients that the body definitely does not need.
With the bread proofing basket, you simply decide for yourself what goes into your bread: your recipe, your ingredients.
The elongated Backefix bread proofing basket has an outer dimension of 44cm x 9.5 x 8 cm and inner dimensions of 42 x 7.5 x 7 cm.
The bread proofing basket is very suitable for 500-650g baguettes.

Tips for using a bread proofing basket

Depending on the type of bread, the loaf of bread should ferment in the bread proofing basket for between 1 – up to 2 hours.
The bread proofing basket also protects the dough piece very well from drying out, which is very important when baking bread.
Before each fermentation process, the bread proofing basket should be clean and contain no flour or cornstarch residues.
The wicker basket should be very well knocked out.
The dough piece can be shaped and excavated using a dough card , for example.
Shortly before inserting the dough piece, the bread proofing basket should be sprinkled sufficiently with flour or alternatively with cornstarch.
To give the bread a certain aroma, you can sprinkle the base with different seeds or seeds.
The bread proofing basket should then be covered with the cover or alternatively with a kitchen towel.
The wicker basket is then best stored in a warm place.
After the fermentation process is complete, which varies at least between 1 and 2 hours depending on the recipe, you can turn the loaf of bread directly onto a silicone baking mat , for example, and put it together on a baking tray in the oven.

The different materials of bread proofing baskets

Bread proofing baskets come in all different shapes and made of different raw materials.
From square, oval, round to triangular bread proofing baskets, you can buy everything.
Backefix offers the most common shapes: oval, round and elongated.
Within the baskets, a distinction is usually made between bread proofing baskets made of plastic, wood pulp and rattan.
Plastic, colloquially also known as plastic, is mainly used in the commercial sector.
At Backefix, we attach greater importance to natural raw materials.
Our bread proofing baskets are a natural product and are made of rattan, a sustainably renewable natural water plant.
The material of the cloths of proofing baskets also differs, there are some made of linen, cotton and various chemical fibers.
The Backefix drape is made of 100% cotton, unless otherwise indicated.

How do you clean a bread proofing basket?

A bread proofing basket is rarely cleaned with water.
After the fermentation process, you should knock out the bread proofing basket well.
For larger dough and flour residues, you can use a hard brush and clean the bread proofing basket with it.
From time to time, you can also rinse the proofing basket briefly or wipe it with a wet cloth if there are more stubborn flour residues.
After this cleaning process, however, the proofing basket should be allowed to dry well.
Absolutely not – you should stack several bread baskets inside each other if they are still a bit moist.
This can lead to mold growth.
A tip from the Backefix team: after knocking out and cleaning the bread proofing basket, you can let it dry in the residual heat of the oven.
